I am rating this cookbook 5 stars It is involved than her previous 2 cookbooks but just as straightforward and easy to follow One thing that jumped out at me is that the recipes in this cookbooks take time For those of us who use her previous cookbook Gluten Free on a Shoestring, Quick and Easy 100 Recipes for the Food You Love Fast that focused on quick and easy recipes that may be a shock Good bread takes time Many of the recipes in this cookbook are going to have a proofing time of 12 hours [...]


    2. expert level GF baking While I m not likely to put quite that much effort into my flour mixes, it does appear that the author has spent a LOT of time experimenting to get her recipes to turn out EXACTLY how she wants them, and it appears that yes, you can make bagels and braided breads and other stretchy doughy things with the careful additions that she s come up with xantham gum AND sometimes pectin AND whey protein isolate about 5 Tbs per 11 1 2 Tbs gf flour AND modified tapioca starch It s ve [...]

I love this book I ve baked a few loaves from it so far and I can t quite get bread to rise as much as I think it should I think the big issue for me is that I live in the desert with 0% humidity so the recipes are a bit too dry to start out with for me I m experimenting with adding a little yeast and a little moisture to see if that makes a difference This isn t the fault of the author who lives in NY where it is much humid Gluten free bread baking is finnicky and takes just the right amount [...]

Nicole does an excellent job of making the process of baking reachable again for those of us who had to give up bread and the making of bread when we gave up wheat And the variety she presents gives you a chance to start from the simple and progress to the challenging I m in my kitchen again and trying new things with surprising results

I love the great information in the first few chapters, but I don t think the recipes in this book quality as on a shoestring The ingredients and required recommend tools are very pricey I don t mind that the recipes are time consuming because I do love cooking and If the result is a wonderful loaf then I am all for it At this point I have tried two recipes and neither have turned out as edible ended up with not nearly enough liquid to be considered dough and I believe adding liquid near the end [...]

Wow, this is not just the definitive book on gluten free bread, this is the definitive book on bread in general I am extremely impressed with the introduction and the discussion of different flours, plus the extremely informative question and answers about troubleshooting baking I am looking forward to getting the ingredients together and trying these recipes this weekend and over the holidays

The bread items these recipes make are very good They take time and planning and special ingredients that are not cheap, if you bake a lot , so that is why I didn t give it 5 stars If you learn to think ahead and make several batches of dough, it is very easy to pull it out and bake The results are delicious


    13. Reminds my of the TV program on PBS, America s Test Kitchen She has tested various GF recipes and combinations of ingredients, and guides the reader in the preparation of bread, biscuits, muffins and all bread like foods we now must eat gluten free Very informative and supportive.


    14. I loved this book because my mother in law has Celiac and loves bread In the fall I want to bake for the family This book gave me recipes that will allow me to do that in a wonderful way It was a beautiful book with lovely easy to follow recipes.
